What ever happened to decent size chicken wings?
Visit any grocery store today and look at the chicken wings if you want to see something really ugly. HUGE wings are all over the place. Some chicken wings are starting to rival the size of some of the smaller turkey wings. It’s a shame.
The real shame is that the consumer actually encourages this practice. Restaurants advertise “big” and “meaty” wings. The general philosophy seems to be “bigger is better”. Everyone who knows anything about chicken knows that the larger the bird gets, the tougher the meat will become.
We make a special trip to a local butcher who provides us with the most beautiful, small and tender wing sections. Sometimes we even get 16 pieces to a pound - outstanding quality.
Sadly, not everyone has access to such a quality product. The popularity of boneless chicken products (nuggets, strips, etc) has led to big birds dominating the grocer’s case.
